Pies are the quintessential American dessert. But with the availability of pre-made pies, the art of pie making is slowly falling to the wayside. Making pie crust can be difficult, but with our tips you will be sure to make a beautiful and delicious pie.
- Refrigerate all ingredients, even flour, before you make the dough
- Use pastry or all-purpose flour rather than bread flour
- Dough should have some pea-sized pieces of fat (butter, lard, or shortening) to make a flaky crust
- Do not overwork the dough
- Chill the dough for 30 minutes before rolling it out
- Bake the crust for a few minutes with a pie weight or dry beans in the pan to set the crust
